Windows/Mac/Unix (Thunderbird): The SendTools extension lets you schedule delivery times for emails you've composed in Thunderbird. It will add a Pending folder with sub folders "scheduled" and "later".

When you want to schedule a message, click the SendAt checkbox in your compose window and select the date and time you'd like the message delivered. You do this by clicking on the top or bottom half of each delivery criteria (bottom decreases the value, top increases). If top/bottom does not work for a particular field element, then click left/right to increment/decrement the value.

When you hit send, you'll notice the message has been filed in a folder marked "scheduled" inside a "pending" folder. When the time hits, Thunderbird will automatically whisk your message away. Message will go out automatically the first time you send messages after the date/time you specified. Very handy. SendTools is free, works wherever Thunderbird does.
With addressContext you can automatically create a mailing list of all the addresses in an email message then compose a message now to that entire list and use SendTools to automatically send it at any future time. Then forget about it.
Known Issues:
- Does not work well with the Virtual Identities extension.
- Does not work on Thunderbird 2.0b2.
